It’s Christmas time again and this cake is the perfect sweet treat for the family over the holidays.

Boiled Fruit Cake
Parsley, Bayleef, Thyme for boeuf bourguigon

Ingredients

  • 2 cups raisins
  • 2 cups sultanas
  • 2 packets dates
  • 250g cherries
  • Pinch salt
  • 2 tsp instant coffee
  • 2 tsp Ginger
  • 2 tsp Cinnamon
  • 250g Butter
  • 4 cups self-raising flour
  • 2 cups Sugar
  • 6 Eggs
  • 2 tsp bicarb
  • 1 ½ cups Water
  • 2 sherry glasses Brandy
  • 2 tsp Mixed Spice

Step by Step Instructions

Melt Butter, add sugar, fruit, bicarb ad water.

Microwave on simmer for 20 mins.

Add Brandy when cool, can leave overnight.

Add remaining ingredients.

Put into paper lined tin and bake at 260⁰F/130⁰C for 3 and half hours.

Remove from tin when completely cooled.

Mixture rises 2,5cm do not over fill tin, rather use two smaller tins (2 x 20cm2).
