Lemon Butter & Bacon Gnocchi

A non-traditional sweet and sour spin on gnocchi with bacon, mozzarella, lemons and of course a bit of butter.

Lemon Butter & Bacon Gnocchi
Parsley, Bayleef, Thyme for boeuf bourguigon

Ingredients

  • 1 packet Bacon (cut into pieces)
  • 250g Butter (Can use half olive oil)
  • 2 lemons (zested & juiced)
  • 1-2 tsp sugar
  • Salt & Pepper to season
  • 800g Gnocchi (Fresh is best)
  • 200g Mozzarella cut into cubes
  • Grated Parmesan Cheese
  • Fresh Basil

Step by Step Instructions

In a large frying pan fry the bacon pieces until crispy, add the butter & garlic, and cook for a few mins until the butter melts & starts to caramelise.

Add the lemon juice & zest, sugar & season with salt & pepper to taste.

If using fresh Gnocchi: Add it straight into the bacon & lemon butter mix and sauté for a few minutes until the Gnocchi is cooked.

If using dried Gnocchi: Boil in salted water for 1-2 mins before adding to the pan, and sauté for one -2 mins

Add the mozzarella cubes and sprinkle some parmesan & basil leaves over the gnocchi in the pan.

Turn off the heat and allow the cheese to melt for a few mins before serving hot out the pan.
