It’s Christmas time again and this cake is the perfect sweet treat for the family over the holidays.
Lemon Meringue Pie
About this Recipe
The perfect balance of tart lemons, sweet meringue, and crispy biscuit base.
- 1 Packet Tennis Biscuits
- 3 tablespoon butter
- 1 Tin Condensed Milk
- 3 Eggs yolks
- 2 Lemons squeezed (125mls)
- 2 tablespoon lemon zest
- 3 egg whites
- 175 g castor sugar
Step by Step Instructions
Base: Crush Tennis biscuits, add the melted butter. Press into a pie dish and place in the freezer to set.
Filling: Mix together Condensed milk, egg yolks, lemon zest and juice. Pour over chilled crust. Place in fridge whilst making merengue.
Merengue: Beat eggs whites until stiff, add castor sugar one Tblsp at a time. Spoon over filling, form peaks with a knife. Bake at 180C for 20min.
