It’s Christmas time again and this cake is the perfect sweet treat for the family over the holidays.
About this Recipe
This traditional Maputo clam recipe comes from Mozambique, and is delicious served with fresh Portuguese Pau bread.
- 1.5 kg large clams
- ¼ cup (60ml) olive oil
- 1 large onion, grated
- 2 tomatoes, grated
- 5 cloves garlic, chopped finely
- 2cm knob ginger, chopped finely
- 4 T coriander, chopped
- 4 T parsley, chopped finely
- 1 cup (250ml) white wine
- 2 green chilies
- juice of 2 lemons
Step by Step Instructions
Add oil and all ingredients to the pot with a tight-fitting lid except clams and stir fry for 10 minutes until soft.
Add clams and place lid on tight. Cook for 12 – 15 minutes
Serving the sauce: Finely chop chilies and add lemon juice and allow each to add their own
