Megan’s Almond Cake

This delicious almond cake is quick & easy! It’s made in a food processor so there are less dishes to clean.


Ingredients
- 230g white sugar
- 100g of flaked or ground almonds
- 4 eggs
- 170g melted butter (allow to cool)
- 80g cake flour
- 80g corn meal
- 1tsp baking powder
- 1 tsp almond essence
Step by Step Instructions
Put sugar in food processor (or Thermomix) and blitz for 15-30 seconds on high until icing sugar is made.
Add ground almond and blitz for 15 seconds on high
Add eggs and blitz for 1 min on low
Add butter and blitz for 1min on low
Add cake flour and corn meal and blitz for 1min on low
Add baking powder and essence and blitz for 1min on low
Line a 30cm round tin with wet baking paper at the bottom.
Bake at 180 for 10min then turn oven to 160 for 15min
