Spicy Tomato Rice with Pork Sausage
About this Recipe
This hearty, spicy rice dish is easy to make and requires only a few affordable ingredients. Serve it hot on a cold day for maximum comfort.
- 15 ml sunflower oil
- 1 onion finely chopped
- 1 tin chopped tomato
- 2 teaspoon curry powder
- 1 teaspoon garlic
- 750g pork sausages (Eskort if available)
- 1 cup rice (par cooked)
Step by Step Instructions
Fry the onions in a deep pan until soft, add garlic and curry paste and cook for another 2 minutes
Add tinned tomato and cook the gravy until thick, about 15 minutes
Add sausages and cook for another 10 minutes
Add the par-cooked rice and top with some water if too dry, cook until rice is soft and serve with coriander
